Chocolate Cake
In honour of Valentine’s day, I had to post something wonderfully chocolaty! This recipe is from my best friend Allison, whom I have known since I was twelve and love like a sister, and is leaving soon for a job in Nunavut:
- ½ c applesauce
- 1 ½ c sugar
- 1 tsp vanilla
- 2 eggs (or egg white equivalent)
- ¾ tsp baking soda
- ¾ c cocoa powder
- 1 ¾ c flour
- ¾ tsp baking powder
- 1 ¾ c skim milk (or rice/soy equivalent)
Pre-heat oven to 350F. Cream applesauce, sugar and vanilla. Add eggs. Mix dry ingredients in a separate bowl. Add alternately with milk to the wet mixture. Blend with electric beater until smooth. Bake 30-35 minutes.
Icing:
Cocoa, icing sugar & skim milk – blend enough to your preferred consistency and taste. Let the cake cool before spreading the icing.
She used to make this cake for birthday parties when we were in university and I just loved it! There were some good nights involving cocoa powder and Kaluha 🙂
