Quiche for Breakfast
These are breakfast on the go. They are similar to my mini-quiche recipe and are made in a muffin tin. Steve has a 6-cup tin, which are each equivalent to two normal ones, which is a normal serving for this, so it will last through the whole week:
- 1 package (10 oz) frozen chopped spinach
- 3 eggs, lightly beaten
- ¾ cup low-fat cheese, shredded
- ¼ green pepper, diced
- ¼ cup onion, finely diced
- 3 drops hot sauce
- Heat through and drain, spinach. Spray muffin tin with spray.
- Combine all ingredients. Mix well and divide evenly among the cups. Bake for 20 min at 350F.
These can be frozen and reheated in the microwave. Any combo of veggies and reduced fat cheese will work for these. You can also add ¼ cup of finely diced ham.
