South Beach Tuna Salad
In addition to her Agatha Christie novels, I borrowed my mother-in-law’s South Beach Diet book. I know I’ve touched on diet vs lifestyle before but the basic premise is to reduce your insulin load for 2 weeks to “reset” your body’s concept of sweet and give your pancreas a rest. The second and third phases slowly reintroduce low-glycemic foods for a long term sustainable solution to maintain a healthy weight.
Steve made a good point that the book doesn’t emphasize or outline a healthy exercise routine, but it does recommend a 20min brisk walk – one that makes you sweat – every single day.
I tried their tuna salad for dinner this week along with a glass of warm milk. Not bad!
- Bed of romaine lettuce
- 1/3 cup each, chopped: cucumber, tomatoes, celery, radishes, avocado
- 1 can tuna (water packed)
I substituted green beans for radishes because our grocery store didn’t sell them in bulk, omitted the avocado (I don’t like it) and topped it with sunflower seeds.
Dressing:
- 4 tsp olive oil
- juice from one lime
- 2 cloves garlic, minced
- cracked pepper to taste
