Oven Roasted Onion Potatoes
Thanksgiving – Steve’s favourite holiday; family but not presents! Ironically, I had heard the Magnotta wine radio commercials and thought she was being encompassing: wines for turkey, lasagna and ham. Turns out it’s just Italians – it’s the exact menu my co-worker is having at her Mom’s. Crazy! Here’s a good side dish for you in the interim »
- 1 small onion, minced
- ½ c vegetable oil
- 2 tsp Herbs de Provençe (or just thyme)
- 2 lb potatoes, quartered
- All all ingredients together in a shallow roasting pan. Mix well.
- Bake at 400F for 45 min, or until golden brown, stirring occasionally. Garnish with chopped parsley.
I had something similar at Kerry’s with steamed asparagus and pork tenderloin, except that she made them with Parisian potatoes (the mini white ones). Very good presentation.
