Sweetened Shepherd’s Pie
This is a bit of a twist on the standard pub fare:
- 3 medium sweet potatoes, peeled and cubed
- ½ c water
- 1 Tbs butter
- 1 med onion, chopped
- 1 clove garlic, minced
- 1 lb ground beef, lean
- ¼ c flour
- 1½ c milk
- 1 beef bouillon cube
- ½ tsp dry thyme
- 1 tsp chili powder
- 1 c peppers, chopped
- 1 c corn
- 1 egg
- 2 Tbs green onion tops, sliced
This is a multi-step process that will take about 20 min to prep:
- Preheat oven to 375F.
- Microwave sweet potato on high with ¼ c water for 10-12 min. Drain
- Scramble fry beef, drain. Saute onion and garlic
- Sprinkle flour over meat. Add water, 1 c milk, bouillon and spices. Stir well
- Mix in veggies, stir. Cook 2-3 min. Spoon into 10c dish.
- Mash sweet potato with ½ c milk and pinch of salt. Add egg. Beat until smooth. Add more milk if necessary to get a whipped consistency
- Stir in onion tops. Spoon over beef. Bake 20 min. Let stand 5 min. Serve
Steve is really not a fan of sweet potato so I mix the topping half-half with golden flesh potaotes.
