Gingerbread Cake
This classic cake is ideal and brings back memories of sitting at Meaghan’s table with a cup of tea.
- 2 1/3 c flour
- 1/3 c sugar
- 1 c molasses
- ¾c hot water
- ½c shortening (margarine)
- 1 egg
- 1 tsp each: baking soda, ginger, cinnamon
- ¾ tsp salt
Beat all ingredients together for 3 min on medium speed. Pour into 8×8″ pan (greased & floured). Bake 50 min at 325F or until a toothpick comes out clean.
