Banana Muffins

These are from Maude Robinson (my Nana’s friend). She lived in Toronto but made them when we came over. Part of the trick to keep them moist is to wrap them up right away to keep the moisture in:

  • ½ c oil
  • 1 c brown sugar, packed
  • 1 tsp salt
  • 1 egg
  • 3 bananas, ripe and mashed
  • 1 ½ c flour
  • 1 ½ tsp baking soda

Pre-heat oven 375F. Cream sugar with oil. Add egg, beat well. Add mashed bananas, beat well. Add flour and soda. Stir gently (don’t beat). Bake 16-20 min in muffin tins.
