Terrilea’s Shrimp
Kerry out did herself this time – messy but absolutely delicious. There was calibrese salad to start and deliciously messy shrimp. As if that wasn’t wonderful enough, she topped it off with chocolate torte and red wine.

Terrilea’s Shrimp
I do not know where she learned this super simple shrimp dish but it has become my fast favourite. It is another toss in a pot dish that I will guess on measurements.
- In a good sized pot, over med high heat mix olive oil (about 1 Tbs.) and garlic (about 1tsp), let them get hot and happy. Add a bag of thawed shrimp that has been deveined. Toss. Add lime or lemon juice (about 1 Tbs.) and put on the lid.
- Once the shrimp start to turn pink add about ½ jar of sweet pimento sauce (can ususally be found in the vinegar aisle at most grocery stores – chili sauce can be used in a pinch but isn’t as good. Hot pimento sauce is good too, just has more zip!)
- Give them a whirl with the spoon to make sure all the shrimp are swimming in pimento goodness. Serve with lots of napkins and friends who don’t mind getting messy!
