Marinated Eastern Chicken
We had this for dinner with salad. Very tasty and easy to make:
- whole chicken, cut into pieces (breast, legs and wings)
- 1 small onion, coarsely chopped
- 2 cup plain yogurt
- ¼ cup lime juice (fresh or bottled)
- 3 garlic cloves, minced
- 1 Tbs gingerroot, grated
- 1 tsp cumin
- ½ tsp each: turmeric, coriander, cracked pepper and cardamom
- 2 tsp paprika
- Wash the chicken and remove the skin. Place in a large ziplock bag or glass container with a lid. Add the remaining ingredients and marinate 12-24 hours.
- Arrange chicken in greased 9×13″ pan, discard marinade. Bake at 375F for about 1 hour, or until no longer pink.
Serves 8. Goes well with salad or couscous. Approx: 180 Calories, 32g protein, 3.2g fat.
