Energy Bars disguised as a muffin

This is from Nish Vardy (Allison’s dad):

  • ¾ c rolled oats
  • ½ c sugar
  • 1 c wholemeal plain flour
  • 1 ½ c bran
  • ½ c unsweetened coconut
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¾ tsp cinnamon
  • 1 c raisins
  • 2 c milk
  • 1 large egg, beaten
  • ½ c oil + 1 Tbs
  • ½ c dried apricots, diced
  • Optional: 1/3 c sunflower seed hearts or pumpkin seeds

Mix dry. Add oil, mix well. Add milk and egg, mix well. Fold in fruit (and nuts). Bake 20 min at 400 in muffin tins or 45 min at 350F in a well greased loaf pan.
