Mediterranean Fish
My great aunt Pearl taught me how to make this:
- 1 pkg. (400 g) frozen fish fillets, (Any frozen mild flavoured white fish will work in this recipe. For starters, try haddock, sole, whitefish, bluefish, cod, basa or halibut)
- 1 medium zucchini, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- ½ can (19 fl oz/ 540 mL) diced tomatoes, low sodium
- 1 tsp fish sauce (optional)
- herbs de provençe or fresh basil (your choice)
Start by “sweating” the vegetables over medium heat, until the onions soften. Lay the fillets on top, cover and simmer for 12-15 minutes, or until the fish is slightly flaky. Garnish with cracked pepper. Serves two.
