Marinated pork or chicken

I came across this marinade – similar flavour to Kerry’s tenderloin recipe but done using pork cutlets or chicken breasts cut into strips instead. 

  • 3 Tbsp apricot jelly
  • 2 Tbsp honey
  • 1 tbsp soy sauce
  • ½ tsp sesame oil
  • 1 tsp ginger, grated
  • 1 garlic clove, minced
  • pinch of chili flakes

When you’re cooking the meat (over very high heat) don’t stir to much so the sauce caramelizes. Flip once when the bottoms are white, add 1/2 red or yellow pepper cut in chunks and continue cooking until the pork is just done. Garnish with green onions. Serves 4
