My Mom used to make this sometimes when we lived in England and I get cravings for it periodically:

  • tin tomatoes, diced
  • onion, chopped
  • garlic, minced
  • zucchini, finely chopped
  • mushrooms, sliced
  • green or red pepper, sliced
  • eggplant, diced (optional, some people don’t like it)
  • peanut butter
  • 2 c brown rice, cooked

It’s easy to make:

  1. Heat the tomatoes in a saucepan, add 1 Tbs peanut butter to thicken. Boil 2-3 min.
  2. Saute vegetables. Add to tomatoes. Serve over brown rice.

When you’re tired and just want something quick and nutritious, this is a filling meal because of the dash of peanut butter. I believe the official name of this dish is ratatouille, a traditional French Provençal stewed vegetable dish. According to Wikipedia, it originated in Nice. It also resembles Mafe!
