Curried Lentil Soup
Dry Ingredients (can be stored as a mix):
- 1 Tbs curry powder
- 2 Tbs Onion flakes
- 1 Tbs dried mint leaves
- 2 tsp garlic powder
- 1 tsp ground ginger
- ¼c dried red lentils
- ¾c dried green lentils
- ½ long grain brown rice
Other ingredients:
- 28oz can diced tomatoes (with juice)
- Cubed stewing beef
Combine contents of dry mix, tomatoes, beef, and 8c water or stock in a large pot or Dutch oven. Bring to a boil on med-high. Reduce heat to med-low, cover and simmer 45-50 minutes. Stir occasionally until rice is tender. (Approx 11 cups)
This is one of our favourite soups. I never planned to share this recipe but I look it up so often, I figured what the heck 🙂
