Curried Lentil Soup

 Dry Ingredients (can be stored as a mix):

  • 1 Tbs curry powder
  • 2 Tbs Onion flakes
  • 1 Tbs dried mint leaves
  • 2 tsp garlic powder
  • 1 tsp ground ginger
  • ¼c dried red lentils
  • ¾c dried green lentils
  • ½ long grain brown rice

Other ingredients:

  • 28oz can diced tomatoes (with juice)
  • Cubed stewing beef

Combine contents of dry mix, tomatoes, beef, and 8c water or stock in a large pot or Dutch oven. Bring to a boil on med-high. Reduce heat to med-low, cover and simmer 45-50 minutes. Stir occasionally until rice is tender. (Approx 11 cups)

This is one of our favourite soups. I never planned to share this recipe but I look it up so often, I figured what the heck 🙂
