Sausage and Peppers over Polenta

Dinner was not only healthy (aka not pancakes with bacon) but beautifully coloured in her cast iron skillet. Being a tool, I forgot my camera (I feel really badly). I got to sit on her green arm chair, tucked into the doorway between the kitchen & dining room, and sip wine while I witnessed her whip together this meal. How I envy her cooking skills!  She started with:
  • Premade packaged polenta (looks like a tube)
  • Package sweet italian turkey sausage
  • 6-8 Mixed peppers, chopped into about inch-size pieces
  • 1 or 2 onions, chopped
  • 2 or 3 cloves garlic, minced
  • can diced tomatoes with juice
  • chunk of parmesean
  1. Steam sausage in fry pan over medium head until it is mostly cooked (about 15 min)
  2. Remove sausage and cut into inch pieces. Return sausage to fry pan and add the peppers, onion, garlic and tomatoes, salt and pepper. Simmer until you’re hungry, 30-45 minutes is best
  3. While sausage and peppers are simmering – cut polenta into about 1/2 inch rounds. Spread on baking sheet that has a little olive oil on it. Bake at 400 F for 15 minutes
  4. Each serving has two slices of polenta topped with shaved parmesan and a heap of sausage/pepper mix and then garnished with more cheese

Kerry read my Potato Shack post after she bought all her ingredients so she knew I’d like this … and I really did! In fact, it was the first time I’d had polenta and found the flavour and texture to be an excellent alternative to pasta or rice. Even the smell of the turkey was delicious while it was cooking -I would make this for Steve for sure!
