Butter Chicken
This is so yummy:
- 2 Tbs butter
- 1c onion, chopped
- 2 tsp garlic, minced
- 1 Tbs ginger root, grated
- 1 tsp chili powder
- ½ tsp tumeric (this gives it a beautiful colour)
- ¼ tsp cinnamon
- 1 can diced tomatoes (19oz)
- 2 Tbs tomato paste
- 1 Tbs brown sugar
- salt/pepper to taste
- 2 c cooked chicken, diced (rotisserie from the store with no skin works, or2 baked chicken breasts)
- 1/3 c cream (5%)
- 1/4 c plain yogurt
- 1 Tbs fresh cilantro, minced
- cooked basmati rice
- Heat butter over medium heat and cook onions and garlic. Cook until soft (approx 10 min)
- Add spices and cook 1 min more
- Add tomatoes, paste and brown sugar. Reduce heat to low. Cover and simmer 10 min. Stir occasionally
- Add chicken, cream and yogurt. Simmer uncovered about 5 min
- Remove from heat, stir in cilantro. Serve over rice
Yes, you can buy butter chicken sauce from a jar but this is much better for you. It serves 5 and has on the order of 300 Cal per serving. Soo yummy with Naan bread too.
