Peach-Pear Pie
Ingredients – most of this you won’t have on hand:
- 1/3 c brown sugar, packed
- ¼ c sugar
- 3 Tbs cornstarch
- ½ tsp cinnamon
- ¼ tsp allspice
- 2½ c each fresh peaches and pears, peeled and sliced
- 1 Tbs lemon juice
- 9″ unbaked pastry shell
- ½c flour
- ¼c sugar
- 3 Tbs brown sugar
- ¼ tsp cinnamon
- ¼ tsp nutmeg
- ¼c cold butter or margarine
Okay, first for the filling: combine the sugars, cornstarch, spices in a bowl. Sprinkle fruit with lemon juice (in a separate bowl). Add to dry ingredients and toss to coat. Pour into pastry shell.
To make the streusel topping: combine flour, second set of sugars and spices. Cut in butter until you get a crumbly mixture. Sprinkle the mixture over filling.
Cover edges with foil (to reduce browning). Bake 375F for 1 hour, or until bubbling. Serves 6-8 pieces
