Lentils and Rice with Onion
Not an original name but the taste is sweet:
- 4 medium yellow oions, peeled
- 1 Tbs olive oil
- 1 c each: lentils and long grain rice
- 3½ c cold water
Here’s how you make it:
- Dice 3 of the onions, saute until tender
- Place lentils and water (or broth) in covered pot. Bring to a boil, cover and then simmer 15 min
- Add cooked onions to the lentils and rice. Cover and simmer 20 min until rice and lentils are soft
- Remove from heat. Let stand, covered, for 5 min
- Slice remaining onions into rings. Saute in frying pan in olive oil. Top over lentils when serving.
