Lentils and Rice with Onion

Not an original name but the taste is sweet:

  • 4 medium yellow oions, peeled
  • 1 Tbs olive oil
  • 1 c each: lentils and long grain rice
  • 3½ c cold water

Here’s how you make it:

  • Dice 3 of the onions, saute until tender
  • Place lentils and water (or broth) in covered pot. Bring to a boil, cover and then simmer 15 min
  • Add cooked onions to the lentils and rice. Cover and simmer 20 min until rice and lentils are soft
  • Remove from heat. Let stand, covered, for 5 min
  • Slice remaining onions into rings. Saute in frying pan in olive oil. Top over lentils when serving.
