Butterscotch Squares
This was my my favourite recipe when I baked as a teenager:
- ¼ c butter
- 1 c brown sugar
- 1 egg
- ¾ c flour
- 1 tsp baking powder
- 1¼ tsp vanilla
- ½ c nuts (optional. I prefer them without)
The instructions are important in this case because of the egg:
- Cook butter & sugar until blended. Cool until lukewarm (this is critical so the egg doesn’t scramble. The pot should be comfortable to the touch)
- Add unbeaten egg. Beat well.
- Mix dry ingredients together (flour, baking powder). Add to the pot plus vanilla and nuts. Mix well.
- Spread dough onto greased pan (I use an 8″ square glass pan) and bake at 350F for 25 min.
- Cool and cut into squares
Edna Stabler describes these as chewy and buttery. She also claims “Norm makes these often” but I don’t know who Norm is … howeer I made these a lot and just love them.
