Low Calorie Raisin-Bran Muffins
February is Heart Health Month (good cross-marketing with Valentine’s Day) so I would be remiss without adding something extremely healthy before this month is through.
If you’re a baker like me, you probably have all this at home already (but double check before you get started. Nothing worse than being ~½c short of flour once you’ve started. Yes it happened to me and I pouted until Steve rescued me – he’s so kind):
- 1 cup all purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups cooking bran
- 1 ¼ cups skim milk
- ½ cup molasses
- 1 egg
- raisins ( I just throw a good couple of handfuls in)
You know the drill:
- Mix dry ingredients
- Beat together milk, eggs and molasses
- Add together with the raisins and mix lightly
- Spray muffin tins with cooking spray and bake at 350 F until done, approx 20 minutes
