An oldie but GF goodie

Steve just wasn’t feeling well yesterday so I decided to make him a treat: flourless PB cookies. It calls for 1 cup of sugar but in truth, I’d use half. It was too sweet for me (who’d have thought!). His PB (natural) had hardened at the bottom because the oil had risen. This was perfect. I let it stand with the egg, sugar and vanilla for about 5 minutes before mixing it in and it softened wonderfully. I also tossed in a handful of chocolate chips.
