Butter Chicken

This is so yummy:

  • 2 Tbs butter
  • 1c onion, chopped
  • 2 tsp garlic, minced
  • 1 Tbs ginger root, grated
  • 1 tsp chili powder
  • ½ tsp tumeric (this gives it a beautiful colour)
  • ¼ tsp cinnamon
  • 1 can diced tomatoes (19oz)
  • 2 Tbs tomato paste
  • 1 Tbs brown sugar
  • salt/pepper to taste
  • 2 c cooked chicken, diced (rotisserie from the store with no skin works, or2  baked chicken breasts)
  • 1/3 c cream (5%)
  • 1/4 c plain yogurt
  • 1 Tbs fresh cilantro, minced
  • cooked basmati rice
  1. Heat butter over medium heat and cook onions and garlic. Cook until soft (approx 10 min)
  2. Add spices and cook 1 min more
  3. Add tomatoes, paste and brown sugar. Reduce heat to low. Cover and simmer 10 min. Stir occasionally
  4. Add chicken, cream and yogurt. Simmer uncovered about 5 min
  5. Remove from heat, stir in cilantro. Serve over rice

Yes, you can buy butter chicken sauce from a jar but this is much better for you. It serves 5 and has on the order of 300 Cal per serving. Soo yummy with Naan bread too.

Fyi, all these spices are available at the Bulk Barn if you don’t want to purchase a whole container.
