Curry Chicken from Janice
The smell at the office (a few weeks back) was painfully good compared to what I had brought, so I had to ask what it was and how to make it. This is Janice’s recipe for Curry Chicken:
- 1 cup water (I prefer that to oil, which most people use)
- chicken, cut into pieces
- onion, diced
- garlic cloves, minced
- potatoes – peeled and cubed
- salt
- 1 chicken stock cube
- 1 small cinnamon stick (or 2 small bay leaves)
- Jamaican curry powder
- Hot pepper (or black pepper; but that may distort the colour)
Directions:
- Wash chicken with a little bit of vinegar in water. Season (with curry, salt, onion, garlic, pepper) and add a little bit of water. Let it marinate in fridge overnight.
- Put 1 cup of water in pot. Mix in curry. Add the seasoned chicken and the cinnamon stick/bay leaf. After about 5 minutes, stir in potatoes. Add enough water to cover the chicken and potatoes. Cover, and simmer until chicken is tender and gravy thickens.
It was served over rice.
