Mexican Fiesta with Tres Leches

Kerry made delicious enchiladas – two each, which we could barely finish – with black beans and rice as side dishes. Apparently the key is to use Taco sauce. With sunbraro on the table and red wine to drink, we were set for the evening … and then she brought out the cake. We were so full, the tea was left half drunk!

Tres Leches (Milk Cake) is a white cake (flour, sugar, butter and eggs) but once it’s cooked, you poke holes and add 1 cup each: milk, cream and sweetened condensed milk. She topped it with cinnamon infused whipped cream and served sliced strawberries. Moist with a rich milk flavour. Gillian and I loved it!
