Jamaican Rice & Peas with Jerk Jackfruit

Jamacian rice and peas

This high-fiber version of rice and peas will aid with digestion while making sure you are deliciously satisfied. It’s one of Dr. Sheron Brown’s favorites!

Ingredients for 4 servings:
· 1 head of cauliflower
· 3 stalks of green onions (scallions)
· 10-15 sprigs of fresh thyme
· ½ cup of fresh coconut, shredded
· ½ cup of pine nuts
· 3 tbsp of cold press extra virgin olive oil
· 1 tsp of Himalayan sea salt
· 1 clove of garlic
· Thumb size of fresh ginger

Directions:

  1. Place cauliflower, green onions, thyme, coconut, garlic, and ginger in a food processor and mince until rice-sized.
  2. Pour into a bowl and mix in the olive oil, pine nuts and salt. Let it sit for at least an hour to maximize the flavour.
  3. Eat by itself or serve as a side (possibly with the jerk jackfruit.)

Jerk Jackfruit

Jackfruit is known for regulating blood sugar level and promoting glowing skin, among many other benefits. So, go ahead: eat and be beautiful.

Ingredients for 4 servings:
· 4 cups of fresh jackfruit (not from the can), chopped
· ½ medium sized red onion, finely chopped
· 3 tbsp of fresh thyme, finely chopped
· 5 tbsp of Grace Mild Jerk Seasoning
· 2 tspn of minced garlic

Directions:

  1. Place all ingredients in a bowl and mix with a spoon until the jackfruit is coated.
  2. Let it sit for at least an hour to maximize the flavor.
  3. Serve it up and garnish with avocado if you choose.
