Nut-balls

I have posted before about making to-go fruit & nut bars. I have been struggling with sugar cravings so I decided to try again.

Ginger-Almond Bites

This was my favourite so far (adapted from Organic Connection Mag):

  • 2 cups plain almonds
  • 1 cup Medjool dates, soaked and pitted
  • 2 tablespoons honey
  • 1 teaspoon crystallized organic ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla (I used the PC Madagascar Bourbon paste)
  • ¼ teaspoon pink or grey sea salt

Instructions:

  1. Place almonds into a food processor.
  2. Mix with the remaining until blended and smooth.
  3. Wet hands and roll dough into 1ʺ balls.

Store balls in a sealed container, separating layers with a sheet of parchment paper. I seriously almost ate the whole batch in one go – seriously!

Chocolate-Cashew Bites

I made a simple chocolate one that was okay, inspired from Create Nourish Love.

  • 1 cup raw seeds or nuts of choice (I used cashews that had been soaked)
  • 1/4 cup cacao powder*
  • 1 tsp vanilla extract (I used PC Madagascar Bourbon paste)
  • 1/4 tsp pink or grey sea salt
  • 1 cup medjool dates, soaked, pitted and chopped
  • 1/4 cup cacao nibs

Instructions:

  1. Place seeds/nuts in a food processor, and process until finely ground. Pulse in cacao, vanilla, and salt.
  2. Add in the chopped dates until the dough comes together nicely. Process until all ingredients are distributed evenly (you may need to stop a few times and scrape down the sides and separate the dough if it forms a ball).
  3. Mix in the cacao nibs.
  4. Wet hands and roll dough into 1ʺ balls.

Place them in a container in the refrigerator or freezer for at least 30 minutes, then serve!

Cookie-Dough Bites

I also tried a cookie dough ball from Daily Burn with cashew butter (soaked and pureed), cocoa nibs, and garbanzo bean flour (instead of almond), and then dipped in dark chocolate. Not actually a fan. Will keep trying.
