Salmon on the grill

Take two with the cast iron pan. We bought salmon from Costco and decided to try it in the cast iron pan, on the BBQ. We used a little bit of grape seed oil, heated the pan at 400F for two minutes and the slapped down the fish. It was cooked within 6 minutes, which we flipped over and cooked for another 2 min. It was perfect!!!! The second filet was in a double layer of foil with rosemary and sliced lemon. We cooked it on the upper rack and it took closer to 15 minutes.

We paired the fish with grilled onion, peppers and zucchini, squeezed a piece of lemon and served it with a half a focaccia roll. Absolutely delicious!
