Scone Mix
What gift can be better than scones and homemade jam? My personal favourite is a dark spiced plum jam made with dark fruits. It is delicious on hot toast with butter or Devonshire cream (that you can get from Fortinos), and also as a dollop in yogurt or a protein shake.
This wonderful currant scone mix will keep in a cool dry place for up to 6 months. Add three cups per air tight container. It makes approx. 2 batches per recipe.
To prepare scones:
- In a large bowl combine 3 cups of mix, 1 lightly beaten egg and ½ cup water. Mix until moistened. Turn onto a lightly floured surface; knead 5-6 times.
- Transfer to a greased baking sheet and pat into a 9-in. circle. Score into eight wedges (do not separate) OR you can also roll out the dough to ½” thick and cut it with a knife, a cookie/biscuit cutter.
- Bake at 400F for 20-25 minutes, or until golden brown. Serve warm. Makes 8 scones.
