Pork and Peppers

Oh I am looking forward to lunches this week! I have 4 servings of fast-fry pork that was done up over med-high heat for 2 minutes per side. In the same pan, I sautéd sweet onion and sliced red pepper. For the side, I made basmati rice cooked with 1 Tbs minced fresh ginger. It smells absolutely divine and so simple to make. The longest part of the whole process was chopping and softening the onions. No other spices or flavours were necessary.

This will be dinner on Monday and lunches the rest of this week.
