Soft Cheese from Yogurt

I love cheese-cheery danish but it took me a long time to realize that it is a strained yogurt. You can also use it as a low-fat substitute for cream cheese (a weakness of mine!) with homemade cherry jam on fresh bread. Oh my mouth is drooling as I write this!

Line a fine mesh sieve with 2 coffee filters and place it over a bowl. Pour in a container of non-fat yogurt, cover the top with plastic wrap. Place it in refrigerator overnight to drain. Much of the moisture will drain, leaving behind a soft cheese. Make sure to record the best before date of the yogurt.

I recommend that you spread this onto french toast or fresh bread and dollop on homemade cherry jam for a special weekend treat. It also tastes incredible on top of chili.
