Breakfast Burrito

We had some eggs and sliced ham to finish off, so I picked up a bunch of broccoli and got cracking. I used a 9″ silicon pan with a drizzle of grape seed oil and added broccoli tops and onion. Steve whipped up 8 eggs and milk and poured them over the bake. I also added one chopped (frozen) roasted red peppers that I had made in the fall.

This baked at 350F for 25 minutes; then I topped it with sauteed mushrooms and sliced ham that we had crisped on a baking sheet and cooked 5 minutes more. We cut it into quarters (2 eggs each) and finished it with a dollop of the new PC Greek yogurt, a handful of alfalfa sprouts and rolled it all up in a soft tortilla. Very filling.
