I made a quick meal for lunches last week. It started with a craving for sausage and an extra green pepper.
- bag of frozen tortellini, meat or cheese
- mild chirozo sausage, thinly sliced
- green pepper, chopped
- mushrooms, washed and thinly sliced
- light feta, finely diced
Cook the pasta according to the package directions. Drain and set aside.
In the meanwhile, start the sausage in a skillet and heat until the oils start to extract. Add mushrooms, stirring frequently to prevent sticking. After 1 minute, add the pepper and continue to cook. It is ready when the juices in the mushrooms let out.
Remove from heat and stir in the feta.
You could also add garlic to this, but I thought it would be too strong given the simplicity of the dish. I also used the meat tortellini to increase my protein. Steve loved it so much, we’re having it again this week!
