Fresh Beets

I grew my very own beets this year. Very excited! My aunt suggested that I cook the beets a little longer last year, so I did 30 min boiling (be careful, the splatter is red!)

I halved the liquid and only topped up what I had from the garden with market fresh ones. Essentially 1 bunch made two pint size jars. I capped one with a cute red gingham lid to give to my parents this year 🙂

I also read a different way to make them – peel and roast them with a drizzle of honey and some black pepper. I want to try that soon! I also found some interesting Beet cake recipes. May try these on the weekend with steak »
