Crockpot Roast Chicken

We had a frozen broiler that was starting to look sad. I found this great recipe online for crockpot chicken.

You through the chicken in the crockpot (removing the skin is optional). Rub it in olive oil. Cook it on low for 8-10 hours.

I popped it in around 10pm and it was done by 8am, reading 176 in the thigh. I let it cool, stuffed the whole thing in the fridge and whipped it into a casserole when I got home from work that called for cooked chicken. Once I’ve got all the meat off, the bones will go in the freezer for future soup. YUMMY!
