No-cook oatmeal

I once had a delicious muesli at a hotel. The chef told me the secret is to let it stand over night. I felt like giving it a try because there were Ontario blueberries at the store and last week, hot oatmeal didn’t seem to be the right fit. I mixed the ingredients below and let it stand overnight in the hopes that it would soften enough to be edible, as if cooked.

  • ¾ cup rolled oats
  • ½ cup skim milk
  • 100mL stirred yogurt
  • ¼ cup fresh blueberries, rinsed

It was great – quick and convenient. I actually liked it cold and found it wasn’t stiff, like the cooked version. The yogurt flavour was subtle. Will make again!
