Len’s potatoes with Asparagus
This is lovely – Len’ potatoes. Daddy used to make them, based on a recipe given to him by a school mate when he was doing his MBA. Parboil the potatoes, about 10 minutes. Then cut them into slices (but not to the end) and cover the potato with 1 Tbs of ranch dressing. Wrap it up in foil and bake in on the grill (around 400F) for 30 minutes, or until done.
In the meantime, I reused the boiling water and added a a steamer basket. Once it was boiling, I added asparagus for about 10 minutes (which the strip loin steaks cooked).
Dinner was topped with a beer – absolutely delicious!
