Chicken fruit salad

I got this recipe from Taste of Home and it made a delicious lunch! In fact I’m going to make a variation this week:

  • ½ cup mayonnaise (or non-fat yogurt – see comments below)
  • 1 Tb each: honey and brown mustard
  • ½ tsp dried thyme
  • pinch ground ginger
  • 2 chicken (or turkey) breasts, cooked and cubed
  • 2 celery ribs, thinly sliced
  • 1 large red apple, finely chopped
  • ½ cup dried cranberries
  • ¼ cup chopped pecans

Combine the yogurt, honey, mustard and spices. In a separate bowl, mix the chicken and fruit. Add yogurt mixture and toss to coat. Chill and serve cold. Serves 4.
