Cinnamon Streusel Cake and Drizzle Icing

My Mom got me a bundt pan and cake in a box mix. It’s for a cinnamon streusel cake. I brought it up to Grandma’s for lunch on Mother’s Day.

The dry ingredients I will try to look up a recipe for, but the basic premise is flour, sugar and baking powder with some spices. Crumble with butter, add milk and eggs and beat smooth. Here’s where the swirl part comes in (I didn’t know how to do this previously):

  1. Pour ¾ cup of batter into prepared pan (grease and flour). Add additional cinnamon and sugar to the mix (to darken) and pour into pan, directly over first layer. Gently swirl layers together with a knife to create the streusel effect.
  2. Bake at 325F for 50 to 60 minutes, or until golden and tester comes out clean. Cool in the pan 10 minutes before inverting onto a serving plate. Cool completely before applying icing.

Icing:

  • ½ cup powdered sugar
  • ¼ tsp vanilla
  • 2-3 tsp milk

In a small bowl, combine powdered sugar and cinnamon. Stir in enough milk to thin the icing to drizzling consistency and then drizzle it over the cake. YUM!!
