Cheap Meals for Lunch
We’ve been buying a lot of meat for meals so I decided to go on the cheap for my lunches:
- 2 tins of tuna in water, drained ($1.25 each on sale)
- 1 cup quinoa grain, rinsed and drained
- 1 cup frozen vegetable (corn, peas, etc)
- 2 tsp each: sesame oil and seasoned vinegar
- ½ tsp shi chi mi (Chinese 5 spice)
Cook the quinoa (1:2 water ratio), toss in the veggies at the end to heat through. Mix in the remaining ingredients. Makes about 3 cups total. Steve thought it smelled great, but wasn’t keen on tasting it lol
