Cheddar Biscuits

Chef Michael says these should be served with Beer Stew, but I think it would be great with old cheddar dunked in his old-fashioned beef stew:

  • 2 cups flour
  • 1 Tbs baking powder
  • ½ teaspoon salt
  • 1 cup grated cheddar cheese
  • 1 ½ cup heavy whipping cream

In a medium-sized bowl, whisk together the flour, baking powder and salt. Add cheddar and stir. Add cream and stir until the mixture just comes together. Knead the dough a few times. Pat the dough into a flat round about one inch thick and cut into eight wedges. Place them on a baking sheet and bake for 12 to 15 minutes at 450F, until the tops are golden brown.
