Butterscotch Squares

This was my my favourite recipe when I baked as a teenager:

  • ¼ c butter
  • 1 c brown sugar
  • 1 egg
  • ¾ c flour
  • 1 tsp baking powder
  • 1¼ tsp vanilla
  • ½ c nuts (optional. I prefer them without)

The instructions are important in this case because of the egg:

  1. Cook butter & sugar until blended. Cool until lukewarm (this is critical so the egg doesn’t scramble. The pot should be comfortable to the touch)
  2. Add unbeaten egg. Beat well.
  3. Mix dry ingredients together (flour, baking powder). Add to the pot plus vanilla and nuts. Mix well.
  4. Spread dough onto greased pan (I use an 8″ square glass pan) and bake at 350F for 25 min.
  5. Cool and cut into squares

Edna Stabler describes these as chewy and buttery. She also claims “Norm makes these often” but I don’t know who Norm is … howeer I made these a lot and just love them.
