Ingredients

1 cup chia seeds
4 cups almond milk
1/2 tsp cinammon

Chia Pudding

This is my go-to breakfast recipe that's easy and quick to make.

Directions

Chia pudding has a sweet nutty texture. It’s not like tapioca or rice pudding. It’s much creamier but check a mirror for seeds before heading into your first meeting of the day.

Bring the almond milk to a boil. Remove from heat.

Add cinnamon and chia seeds. Whisk together. Let stand for 5 minutes, then whisk every 10 minutes (i.e. 2-3 more times) to remove the clumps as it sets.

I have modified this recipe to 1/4 cup of boiling water and 1/2 cup almond milk. It’s faster to make and doesn’t require watching the stove to stop the milk from foaming up.

I also add cinnamon, ginger and tumeric as flavouring. Delicious!
