Ingredients

1 bag coleslaw alternative: shredded carrot
2 tomatoes chopped
1 cucumber diced
2 stalks celery (optional)
1 bell pepper diced
2 avocado diced
4 tsp, divided olive or flax oil
1 can tuna
1 Tbs Whole grain Dijon mustard
2 cups spinach
4 wide-mouth mason jars

A simple salad that is easy to assemble

This tuna salad is easy to assemble for lunches or picnic. You just need a fork. Have jar, will travel.

This delicious tuna salad recipe is adapted from the Loaded Veggie Avocado Tuna Salad by Hummusapian » It calls for apple, onion and celery but I reimagined it with a savoury tomato-cucumber. Celery is expensive to purchase for just 1-2 stalks. Certainly not required.

Mash together the can of drained tuna with 1 Tbs mustard.

Evenly distribute and layer into each wide mouth jar: coleslaw, tomato, bell pepper, celery (if using), and avocado. Add 1 tsp of flax seed or olive oil.

Evenly divide the tuna into the jars. Pack in up to 1/2 cup of baby spinach (chopped lettuce or arugula) at the top.

Seal with the lid/ring. Keep the jar upright until ready to serve and then shake.
