Ingredients

Dressing
1/4 cup apple cider vinegar
1/4 cup Mayonaise or amount to taste (1 cup total)
3/4 cup Greek yogurt or amount to taste (1 cup total)
2 Tbs honey
Salad
1 medium green apple Core and chop
1 medium red onion finely diced
1/4 cup raisins or dried cranberries
1 bag coleslaw prepared (cabbage, broccoli or carrot are my favs)

Green Apple Coleslaw

Delicious salad with creamy dressing and crunchy vegetables.

Directions

This delicious salad has a creamy dressing, paired with crisp vegetables. The tart green apple is balanced with raisins (or dried cranberries). The prepared bag of coleslaw can be swapped for broccoli florets (shown below).

Dressing

Start by making the dressing. Let stand while you assemble the salad.

Add the coleslaw, onions and raisins and toss to coat.

Refrigerate salad for a few hours before serving. Garnish with fine strands of carrot or sliced almonds just before serving.

Yesterday, we had pulled beef in a pita for lunch with a side of carrot coleslaw, adapted from the Green Apple recipe (I forgot to buy an apple)!

We used dried cranberries, instead of raisins.

The blend of mayo and greek yogurt gives the dressing a sweet-sour taste. It paired really well with the sweet sauce of the beef.
