I decided to try my hand at making my own fruit-nut power bar. The first attempt was apple pie. No one had a tested recipe so I used the combo bar of flavours :
When making 2-3 bars use ½ cup of the dried fruit on their own or in combination and ½ cup of nuts and/or seeds, plus ½ tsp of extracts, a teaspoon or so of the spices and 1 tbsp of the zests and juice depending on how much flavor your would like. – DAMY Health
The paste was 1/4 cup each of dried apple slices and dates, plus 1/4 cup each of almonds and cashews. I added 1/4 tsp of vanilla plus some pie spice. They were okay. Steve wasn’t a fan.
Today I tried something else I found on Chocolate Covered Katie. She calls them fudge balls and claims it made 2 larabars, but mine didn’t turn out that way:
- 1/4 cup pecans
- scant 2/3c dates, soaked in warm water for at least 5 min if they are pre-packaged to take the coating off
- 1/8 tsp pure vanilla extract
- pinch of salt and 1/4 tsp of pie spice
- 1 Tbs chocolate chips
Blend the ingredients in a food processor. Smush into bars or roll into balls and wrap in cellophane.
Good texture, less vanilla. It dominated the flavours. Less work but not enough volume for 2 bars! I think 3/4 dates to make a full cup would have been better. I stored mine in the fridge.
